Super Delicious Food: Girls’ Night In Party

The party was after dinner time, so I did not need any large entrees, and there were 11 women in attendance. I stuck to dips and desserts with only one hot finger food item. I prepared the cheesecake the night before and everything else I did the day of, including the sugar cookie dough. Here’s the final list:

  • Jalapeno Poppers
  • Chocolate Wrapped Croissants
  • Plain Pita Chips
  • Pesto Pita Chips
  • Cucumber Dip
  • Sugar Cookies
  • Plain New York Style Cheesecake
  • Vegetable tray
  • Assorted berries
  • Bruschetta (made by Emily)
  • Hummus (made by Holly)
  • Mexican Dip (made by Melissa)

And here’s the breakdown with recipes and all:

Jalapeno Poppers

Need:

  • 15-20 Jalapenos
  • 1 Block Cheddar/Colby-Jack Cheese
  • Bacon

What To Do:

  1. Set oven to 350F
  2. Cut jalapenos in half, scoop out seeds with a spoon
  3. Cut cheese into cubes or rectangles to fit into the pepper, just place on top
  4. Cut the bacon into strips, place on top of cheese
  5. Bake in oven about 20 minutes; until bacon is fully cookied

Seasoned & Pesto Pita Chips

Need:

  • 2 Packages pita bread
  • Olive oil
  • Salt
  • Pepper
  • Pesto
  • Parmesan Cheese
  • Garlic Powder

What To Do:

  1. Set oven to 325F
  2. Cut pita bread into wedges
  3. Place all on baking sheet
  4. Cover some of the wedges with olive oil; sprinkle with salt, pepper, garlic powder (these will just be seasoned)
  5. Cover the rest of the wedges with pesto; sprinkle with parmesan cheese (these will be pesto flavored)
  6. Bake in oven for 10 minutes or until browned

Cucumber Dip (Gyro sauce)

Need:

  • 1 English cucumber
  • Dillweed
  • Lemon juice
  • Sour Cream

What To Do:

  1. Finely chop the cucumber
  2. In a small bowl mix the cucumber and sour cream
  3. Stir in lemon juice and dillweed
  4. Continue adding for taste
  5. Sprinkle dill on top for prsentation
  6. Serve with pita chips!

Chocolate Wrapped Croissants

Need:

  • 1 tube croissant dough (ex. pilsbury)
  • 1 pkg semi-sweet baking squares

What To Do:

  1. Chop 2 squares of chocolate (per tube) into smaller rectangles
  2. Follow directions on tube for oven temp and dough prep
  3. While rolling up the croissants, place a rectangle of chocolate on the dough, then roll over it, then place another piece, etc.
  4. Bake 20 minutes
  5. Best if served warm

NY Style Cheesecake

Need:

  • 1 1/2 cups HONEY MAID Graham Cracker Crumbs
  • 1/4 cup butter, melted
  • 1 1/4 cups sugar, divided
  • 4 (8 ounce) packages Cream Cheese, softened
  • 2 teaspoons vanilla, divided
  • 1 (16 ounce) container Sour Cream, divided
  • 4 eggs
  • Sliced berries

What To Do:

  1. Set oven to 325F.
  2. Mix crumbs, better and 2T of sugar; press firmly onto bottom of 9″ springform pan
  3. Beat cream cheese, 1C of sugar, 1t of vanilla in a large bowl until well belnded
  4. Add 1C of sour cream; continue mixing
  5. Add eggs one at a time; blending after each one
  6. Pour mixture ontop of crust
  7. Bake in oven 50 minutes
  8. While baking: Mix remaining sour cream, 2T sugar, 1t vanilla until blended; spread over cheesecake
  9. Bake an additional 10 min. with topping
  10. Cool, cover and refrigerate 4 hours or overnight
  11. Top with choice of berries
